In April of 2007, after long months of construction, after flying in a Colombian artist from Miami to design and paint the interior, and after importing a huge container from Colombia filled with tables, chairs, and pre-columbian artifacts, the “new” Lincoln location was opened. Every table, chair, barstool, and even the bar tops were handmade by owner Soraya Suarez’s brother in Bogotá, Colombia, who owns and operates a furniture factory. The design of the new location is intended show another side of Colombian culture, specifically the historical and artistic impact of Colombia’s indigenous populations. The design of the old Lincoln location was reminiscent of a colonial style Colombian farm house. It was very nice, however it looked just like EVERY SINGLE ONE of the twenty or so Colombian restaurants in Chicago. As is explained in the “Our Story” section of this website, the new Lincoln location represents the culmination of 15 years of hard work by the Suarez family, who came to this country with the dream of opening a beautiful restaurant that would proudly represent Colombian culture to Chicago. Las Tablas is an establishment that has always prided itself on its uniqueness, and in that we feel we have succeeded. Today Las Tablas is truly like no other Colombian restaurant in Chicago. We realize that many of our long-time clients miss the old location (we miss it also), but in life and business one always must seek to improve and advance. We feel that after 15 years, the “charming little hole in the wall” restaurant image had run its course. That is not what we came to this country to do. Our goals are much higher than that. We apologize to our long-time clients who miss the old location. However we are confident that if you come in with an open mind to enjoy some live music, the best Sangria in Chicago, and the same great food we’ve served for fifteen years, you’ll be happy to keep calling Las Tablas your favorite Colombian restaurant. We realize that change is a difficult thing for many people to accept, however change is not the best word for what we are trying to do. Rather we plan gradually transforming Las Tablas into one of the best restaurants in Chicago. Moving across the street is only the first stage of that transformation. We do promise however that a year from now the menu will be better than it is now. The service will be better than it is now. The entertainment will be better than it is now. The bar and wine list will be better than it is now; and we will not be content until we have shared the beauty of Colombian food, art, and culture every Chicagoan who enjoys dining out. Not only do we now offer a much more comfortable and spacious environment, we now are able to have our guests wait at a bar on weekends instead of outside in the cold (as was the case at the “Old“ Lincoln location), we also offer Chicago’s finest Mojitos and Sangria, while still allowing our guests to bring their favorite wine for only $4.00 Sunday Thru Thursday (please see our BYOB policy). Also try Chicago’s only Colombian brunch/buffet, Saturdays and Sundays from 11:00 am to 3:00 pm, where we offer various special items every week in addition to traditional Colombian breakfast food such as “huevos pericos” and “caldo de papa”
